Easy & Delicious Blackberry Recipes

What’s your favorite berry? While we know just how hard it can be to pick a favorite, we love just how many things you can do with blackberries. Here are some easy and delicious recipes that I truly love to share with people during our blackberry season.

Leigh’s Cheater Cobbler Recipe

You’re going to love this simple and delicious treat. Just follow the steps below.

Ingredients:

  • 4 cups of blackberries
  • 1 cup sugar (plus some added sugar to taste)
  • 1 cup Bisquick or other baking mix
  • 1 stick of butter

Start by preheating your oven to 350 degrees F.

You will then put 4 cups of blackberries into a greased 9”x12” baking dish. Add a little sugar on top.

Mix 1 cup of Bisquick and 1 cup of sugar. Beat 1 egg into the dry ingredients, working it in with a fork until it looks lumpy. Pour the dry mixture over the berries and spread it around, and then melt 1 stick of butter. Drizzle the butter over the top as evenly as possible.

Place the dish in the preheated oven and bake for between 40 and 45 minutes. You want it to be bubbly and light brown. When it’s done, take it out and let it cool a bit before serving.

While we love using blackberries, you can use any fruit you like for this recipe. You might also want to have some vanilla ice cream on hand, as they can go quite well together.

Easy & Delicious Breakfast Granola with Blackberrys Recipe

Here’s something you can do that’s nice and simple. It works well for breakfast, or a snack whenever you are feeling a little hungry. Below is a list of the ingredients you can use, but feel free to substitute/add/remove as you see fit to better match your tastes.

Ingredients:

  • 1 ½ cups old-fashioned rolled oats
  • ½ cup shaved coconut
  • 1/3 cup shredded coconut
  • 1/3 cup chopped walnuts
  • ¼ cup slivered almonds
  • ¼ cup sunflower seeds
  • ¼ cup whole flax seeds
  • 3 tbsp. brown sugar
  • 1 tsp. ground cinnamon
  • 1 tbsp pure honey
  • 1 tbsp. canola oil
  • ¼ cup raisins
  • 1/3 cup dried cherries

Mix all of the ingredients together well and spread in a single layer on a cookie sheet.  Toast in a preheated oven at 350 degrees F for about 10 minutes, stir and toast 5 more minutes.  Let cool and bag up for a terrific granola to compliment any berry!

You will also need some vanilla Greek yogurt and fresh blackberries—as much as you would like. Not only can you change out the above ingredients, but if you have a berry you prefer, sub that in for the blackberries.

The Best Summer Cocktail

Nothing beats sitting outside in the shade on a warm day while having a nice, cool drink in your hands. This coctail is an easy and delicious recipe with blackberries. Keep in mind that you can make this either with or without alcohol. It’s just as good either way.

Ingredients:

  • 1/2 lb. blackberries (or mixed berries)
  • 1/4 cup fresh basil (optional)
  • 3 tbsp. sugar
  • 3 tbsp. orange juice
  • 2 tbsp. lemon juice (freshly squeezed if you have it)
  • Club soda
  • 3/4 cup gin or vodka if you want to have alcohol in the drink

All you need to do is stir together the berries, the basil, the orange juice, sugar, and lemon juice. Stir until the sugar is fully dissolved and the berries start to break down. Let it stand for about 10 minutes, then add it to a glass of ice and club soda. Again, you can add gin or vodka if you would like.

The sparkling club soda and the berries give this drink something special.

A Healthy Dessert for a Hot Day

When the unrelenting summer sun is just too much, make sure you give this delicious treat a try. It’s easy to make, it tastes great, and it happens to be healthy, too.

  • Frozen blackberries (you could use other types of frozen berries if you would like)
  • Low-fat blueberry kefir

You will simply mix the kefir with the frozen blackberries. Because the berries are frozen, they are going to give the kefir a consistency similar to ice cream. You can mix and match the ratios of each to get the consistency and flavor that you want.

I’ve made this many times in the past for guests as a quick and easy dessert. You’ll also love that it’s a nice and healthy option. The kefir, for those who may not know, is a type of tangy yogurt drink. The mix of the kefir with the berries is filled with probiotics and antioxidants.

Easy & Delicious Blackberry Walnut Salad Recipe

Here’s a simple recipe if you are looking for a healthy, light dish that is a bit sweet and a little tangy.

Ingredients:

  • 3 cups of baby spinach
  • 2 cups of fresh blackberries, cut in half
  • 1/3 cup crumbled feta cheese
  • ¼ cup chopped walnuts
  • Dressing to taste (see below for type)

Just mix these ingredients and toss the salad gently. Serve and then add as much or as little dressing as you would like. When it comes to the dressing, you can use whatever you prefer, of course. However, you should think about the flavors in the salad. Having a tangy vinaigrette, such as a berry or balsamic vinaigrette, could be a good choice.

You could also add more types of berries or swap out the blackberries for another berry if you would like.
