Berries.

Berries are packed full of antioxidants–particles in our bodies that help neutralize free radicals. These free radicals damage cells and put you at risk for diseases like cancer and heart disease. Blueberries are your #1 option for high antioxidant levels. Cranberries also help keep those pesky urinary tract infections at bay.

Dark Leafy Greens.

Dark leafy greens like spinach, kale, bok choy, and dark lettuce should be your diet’s priority! They have it all: vitamins, folate, iron, magnesium, carotenoids, phytochemicals, beta-carotene, and antioxidants.

Sweet potatoes.

Sweet potatoes are another delicious and healthy plant-based food that will make your body happy. They contain antioxidants, vitamins C and E, folate, calcium, copper, iron, potassium and more. The fiber contained within them also promotes a healthy digestive tract.

Tomatoes.

Tomatoes are not only a tasty summer veggie, but they also contain an antioxidant called lycopene that may help protect you against some types of cancers. They also contain vitams A and C, potassium, and other good-for-you nutrients.

We asked Carol to share some insight with us!

What are people most surprised to learn about chronic disease?

“They are surprised to learn the underlying cause of 80% of chronic disease in the U.S.—high blood pressure, heart disease, strokes, diabetes, colon and other digestive cancers, and many more—is NOT their genes or ‘getting older.’

80% of chronic diseases are actually due to diet and lifestyle. And there are thousands of studies published in scientific journals that show this. This is GREAT NEWS! Because it empowers people to make changes in their diet and lifestyle that have a PROFOUND effect on their health, energy and quality of life.”

Can you share a story of a client who has seen improvements in chronic disease after diet & lifestyle changes?

“I have a client who was a diabetic for more than 15 years, had 100lbs to lose, and was taking 4 medicines for his diabetes everyday (in addition to numerous other medicines). He had diabetic neuropathy in his feet and hands which was causing him to walk less and impairing his ability to type on his keyboards at work.

He decided to go “all in” and switch to a plant based diet for a month to see what would happen. The transformation was remarkable! At the end of the month, he had lost 30lbs, eliminated 2 of his diabetic medications and reduced the other 2 by 50%. He took a trip with his wife and took a walking tour of a town for several hours without any neuropathic pain. He hadn’t even noticed his pain was gone until I asked him about it. He got teary when he realized it had disappeared!”

What are you most excited to share with class attendees?

“I am most excited to share with people the empowering message of how eating more plant foods can improve both the quality and the length of their lives. I will share some of the studies that show REVERSAL of chronic disease with diet and lifestyle changes. This is not new news—the first study to show reversal of heart disease was published in 1990, and these types of studies have been published throughout the years since then.

Unfortunately, most people are confused by all the conflicting information they hear everyday about diet and many profit from their confusion. Doctors receive less than 30 hours of nutrition education during their approximately 8 years of training so they do not know about this unless they have sought it out for their own knowledge.

And the companies that are selling the meat, fast food and processed foods do not care about your health, they only care about their profits. There is no “Big Broccoli” lobby, nor do you see billboards promoting the health benefits of eating beans posted throughout Nashville.

But times are changing. People are realizing that the pills and procedures are not returning them to health and that their chronic conditions and obesity continue to worsen every year. They are deciding to seek out new information which can empower them to take control of their health. These are the people who will be most impacted by my message.

There is a way to UNDO most chronic disease, to feel better and to enjoy you life more. And sharing how to thrive again is my passion.”
